When Nouba first set out to create the most authentic pizza in Jaipur, we knew it had to start with a real wood-fired brick oven. Our pizzas are hand-stretched and baked at high temperatures in a brick oven fired with seasoned wood, giving the crust a beautiful char, a light smoky aroma, and that perfect balance of chewy and crisp. This traditional cooking method – the same that has been used in Italian pizzerias for generations – ensures each pie emerges with an unmistakable authenticity and flavor that ordinary ovens can’t match.

Our Quattro Formaggi Pizza is a cheese lover’s dream, melting together four varieties (goat cheese, bocconcini, blue cheese, and parmesan) into one indulgent pie. To showcase our inventive side, we created the Nouba Pizza, a house favorite that swaps tomato sauce for a vibrant pesto cream base, then layers on delicate bocconcini mozzarella and a generous handful of arugula for a fresh, peppery kick. Even our vegetarian offerings push the envelope: God’s Own Pizza comes loaded with spinach, arugula, roasted garlic slivers, tangy goat cheese and artichoke hearts – an earthy, gourmet medley on a perfectly charred crust – while the Farmhouse Pizza celebrates garden delights with a colorful mix of onions, bell peppers, zucchini, broccoli, black olives and jalapeños atop golden, bubbling cheese.

Our Pepperoni Pizza features premium pork pepperoni that curls and crisps in the intense heat of our oven, releasing smoky-savory notes into the molten mozzarella. The Chicken Tikka Pizza is a nod to local tastes – tender pieces of spiced chicken tikka, charred onions and green capsicum meet Italian cheese to create a cross-cultural delight that still feels true to the pizza spirit. And if you’re feeling adventurous, the Unusual Laal Maas Pizza is our boldest fusion: inspired by Rajasthan’s famous mutton curry, we spread a luscious laal maas gravy over the crust and top it with juicy shredded mutton.
